It is for trainees who want to begin a career within the hospitality industry, specialising in restaurant operations. They will wish to progress as a qualified member of the food and beverage team, and will be able to demonstrate the ability to perform practical skills and have the necessary knowledge in order to complete the assessments.

Qualification Structure
(Trainees can take the full qualification of 175 hours (6 weeks) or individual units on request)
- Safety at work 30 hours (1 week)
- Customer service in hospitality and catering industry 25 hours (4 days)
- Food and beverage service skills 60 hours (2 weeks)
- Hot and cold beverage service skills 25 (4 days)
- Menu knowledge 15 (2 days)
- Introduction to the hospitality and catering industry 20 (3 days)
